MEET DANIEL COLONEL

The chef behind your most delicious memories.

Daniel’s love for baking began early—sneaking sweet bites and working his first bakery job with his mom driving him in at 4:30 AM. After training at The Culinary Institute of America, learning sugar flowers from Betty Van Norstrand, and working with top cake designers, like Madison Lee’s Cakes, Nine Cakes, Charlotte Neuville, and Ron Ben-Israel, he fell head over heels for wedding cakes.

With over a decade of experience and a gap from some talented designers stepping away, Daniel launched his own brand—then came the cookies. What began as a spontaneous bake during the pandemic turned into a cult favorite, filled with nostalgia and heart.

From towering cakes to chewy cookies, Daniel’s mission is simple: connect with others, create something joyful, personal, and unforgettable.

Servicing the LGBTQ+ Community

Being a pastry chef in New York City is more than a profession to me—it's a heartfelt connection to my community. Growing up, the idea of same-sex marriage seemed near-impossible. Today, I'm proud to celebrate love and equality through my creations. I craft pride-themed desserts, including a special pride cookie each June (the “Gimme Gimme” Cookie) and rainbow cones that make the perfect display for any Pride event, to honor diversity, love, and progress.
